Peanut Butter and Chocolate Bread

  • 3 cups flour
  • 2 t baking powder
  • ½ t baking soda
  • ½ t salt
  • 1 cup creamy peanut butter
  • ½ cup butter, softened
  • ½ cup sugar
  • ½ cup brown sugar
  • 2 eggs
  • 1½ cups buttermilk or sour milk*
  • 2 t vanilla extract
  • 1 cup miniature semi-sweet chocolate chips
  • *To sour milk: Pour 1 T lemon juice into a 2 cup measuring cup. Add enough milk to make 1½ cups. Let sit for 5-10 minutes.
  1. Grease bottom and 1 inch up sides of two 8 x 4 x 2 inch loaf pans; set aside.
  2. Preheat oven to 350ยบ
  3. In a medium bowl, combine flour, baking powder, baking soda and salt; set aside.
  4. In a large mixing bowl, beat peanut butter and butter with an electric mixer on medium speed for 30 seconds or until combined. Add the sugars; beat on medium speed until light and fluffy. Beat in eggs, one at a time. Combine buttermilk or sour milk and vanilla. Add buttermilk mixture and flour mixture alternately to peanut butter mixture. Stir in chocolate chips.
  5. Divide batter evenly between the prepared pans.
  6. Bake oven for 45-50 minutes or until toothpick inserted near the center comes out clean.
  7. Cool bread in pans on wire racks for 10 minutes.
  8. Remove bread from pans.
  9. Cool completely on wire racks.
  10. Wrap each loaf in foil or in plastic wrap; store overnight before slicing.
