Avocado Hummus
Recipe type: Appetizer
  • 1  15-ounce can cannellini beans, rinsed and drained
  • 2 avocadoes, seeded, peeled and quartered
  • ½ packed cup kale
  • ⅓ cup fresh Italian parsley leaves
  • 1 clove garlic, smashed
  • 2 tablespoons fresh lemon juice
  • 1 tablespoons extra-virgin olive oil
  • 1 tablespoon Tabasco sauce
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  1. Combine all the ingredients in the bowl of a food processor.
  2. Pulse until the mixture is coarsely chopped.
  3. Taste to add more salt and pepper if needed.
  4. Spoon the hummus into a serving bowl and serve with crackers, chips or celery sticks.
