Are you familiar with the Spanish vegetable soup called Gazpacho? My mom has been making it in the summer for as long as I can remember, so it has become one of my go-to seasonal recipes when I have an overstock of my own produce.
I love that it’s garlicky, satisfying, and packed with nutritious ingredients. Plus, you can prepare it whenever you have a few minutes and then just keep it in the refrigerator until you’re ready to serve it. I swear, this is one of those meals that just gets better as the flavors sit together!
Of all of the different gazpacho recipes that I have tried over the years, this is the version that I come back to. It’s so easy, so fast, and so delicious. I like it with a baguette on the side, or even with some grilled shrimp or chicken tossed in for additional protein. This is clean-eating at its finest, and it totally reminds me of home!
So head over to the farmer’s market or haul in a load from your garden. You’ll want to blend together this quick and easy soup for a healthy make-ahead lunch, snack, or dinner option to have on hand all week long!
- 1 cucumber, sliced
- ½ red onion, chopped
- 1 bunch fresh parsley (stems removed)
- 1 red bell pepper, seeded and chopped
- 3 large tomatoes, seeded and chopped
- 2 cups tomato juice
- 2 tablespoons extra-virgin olive oil
- ¼ cup balsamic vinegar
- 1-2 cloves of garlic, minced
- 1 tablespoon honey
- Juice from 1 lime
- ½ teaspoon salt
- ¼ teaspoon pepper
- Place all ingredients in a high-speed blender or food processor and puree until just blended. Season with additional salt and pepper, to taste.
- Refrigerate until ready to serve. Serve cold.
