Have you noticed I’ve been kind of quite the last few weeks. I hope so! But let me tell you why. I swear, well not really swear, but you know what I mean. My life has been SO different since like January. Between the weather, icey roads, and our loads being all over the place, our days off have been none existent or any which day. So needless to say I have NO schedule. Now I’m not a real scheduled person anyway, but this has been rediculously unorganized! I never know if I’m coming or going. I was handling it good for a while and then I just lost control. Now I’m not saying this to say poor me, we have had some time off too and many blessings. Last week we enjoyed our seven grandchildren and daughter spending spring break with us and we had a blast. At the end of the day I was to worn out to blog, I so admire all you mommy blogs! So I just wanted to say I appreciate your support and sticking with me through it all. I LOVE your comments and friendship and loyalty with Memories by the Mile. I’m trying to make it fit all around my none existent schedule and hope that my life will figure out a routine soon. Today I’m sharing this delicious Apple Coffee Cake. It is so moist, ful of texture and flavor. I love it for a snack anytime of the day, morning, noon, or night. It’s just the right sweetness and truly goes with anything. Have it with an ice cold glass of milk or a hot cup of tea. As a side dish to a pork chop dinner or with your breakfast eggs. Anytime is the perfect time for this Apple Coffee Cake, seriously, you are going to love it as much as I do!
- 4 medium apples (peeled and cut into small chunks)
- juice from ½ lemon
- 1¼ cups sugar
- 3 cups flour
- ½ cup chopped almonds
- 1½ teas.baking soda
- 1 teas. ground cinnamon
- ½ teas. salt
- ½ teas. ground nutmeg
- 1 cup canola oil
- 1 teas. vanilla.
- Preheat oven to 350*
- Spray 9 x 13 pan with cooking spray
- Place cut up apples in bowl with ¼ cup of the sugar and lemon juice and mix. Set it aside
- Combine flour, remaining 1 cup sugar. baking soda, cinnamon, salt, and nutmeg in large bowl.
- Mix well.
- Add oil and vanilla and mix well.
- Stir in almonds and apple mixture.
- Place in pan and sprinkle a little cinnamon and sugar on top.
- Bake about 35 minutes until toothpick inserted in the center comes out clean.
- Cool in pan on wire rake.
- Serve warm.
