Your kids are going to LOVE these Mini Breakfast Oatmeal Muffins! Do you have a hard time getting your kids to eat breakfast? Do you need a quick and easy and not messy snack to eat on the go? I have just the thing for you! I started making these muffins for a diet that I was on and loved them. So I made them for my grandchildren from  Quaker Instant Oatmeal and they loved them too! They seriously are the easiest things to make and literally take less than 10 minutes. I put them in a baggie after they have cooled and take them with me in the car. They’re great for a road trip or when you’re in a hurry. My husband loves them for a snack while he’s driving too!

Quaker Instant Oatmeal


Brown Sugar


Simply open 2 oatmeal packet and place in a small bowl, add 1/3 cup water, the water may vary, you want it a batter like consistency. Then sprinkle in cinnamon or brown sugar, depending on the flavor, and stir. Spray mini muffin pan with cooking spray and place spoonful of mixture into each whole. Sprinkle cinnamon or brown sugar on top, if desired. Bake in a 350* oven for 6 to 8 minutes. Remove from oven and let cool on baking rack. Place in ziplock baggies. Every two packets makes 8 muffins.

What are your kids favorite flavors? Try them all and you can get creative too!  Add a few chocolate chips or raisins, whatever your family likes. Mine love the cinnamon and brown sugar. These mini breakfast oatmeal muffins are prefect for mornings that you are in a hurry or even to make and keep in refrigerator for a quick and easy snack.  How about a snack to take to the pool, there very filling and no mess! I made these for three of my grandchildren Saturday, so Mom didn’t have to make breakfast before church. They loved them and so did she!

    I just made these but no brown sugar or instant oats…used bakers white sugar, vanilla, cinnamon, old fashioned oats and fresh strawberries….Mercy me…they are delicious. I can see how they might have a better texture using instant oats….these are so moist with the strawberries, they tend to fall apart…..right in my mouth. hahhaa….thanks for the recipe and inspiration.
