How about Chilled Strawberry Rhubarb Soup, YUM!
My favorite food on a cruise, is every night they serve a different cold soup. The different flavors they make are endless! I can’t wait to taste them and see what flavors the chef puts together. So today my son and I came up with this one, Chilled Strawberry Rhubarb Soup. What could be better and it was it seriously delicious!
A cold or chilled soup can be a great coarse for a summer meal. They don’t take much time and no cooking. Use fresh and flavorful fruits and vegetables and you have a very healthy addition to any meal.
Experiment with different combinations and you too can come up with a delightful, fresh, and tasty cold soup. What are your favorite flavors? Don’t be afraid to go outside of the box to make cold soup that stands out. But trust me, I’ve had very few I didn’t like.
Add a little garnish on top and make it a work of art. For our Chilled Strawberry Rhubarb Soup we cut a couple of strips off the rhubarb and lemon peel and cut a strawberry.
- 1 Rhubarb Stalk
- 15 to 20 large strawberries
- juice from ¼ of a lemon
- 1 teaspoon of camamile
- 3 tablespoons Chokecherry Honey or honey
- Clean fruit and place in food processor, add lemon juice, honey, and camamile. Blend till the right consistency. Place in refrigerator to chill.
- Serve in bowl and to garnish, cut strawberry in halve, place on top with slivers of lemon peel.
