Hey, y’all! It’s Jamie from Love Bakes Good Cakes! I’m back this month with an Easy Piña Colada Ice Cream recipe! I have been craving a fruity type of ice cream the past few days – and finally settled on a pineapple and coconut flavor. Need I say more?! 😉
Since the temperatures are on the rise, this ice cream is perfect to pin or bookmark for warmer weather! It’s so easy to make and the best part? There is no cooking involved! Y’all know I love easy! A box of instant pudding mix helps get this off to a yummy start! If you are a coconut fan, you could add some toasted coconut at serving time for that little extra flavor – although, it’s totally not necessary! I hope you enjoy this as much as we did!!
Easy Piña Colada Ice Cream
Yield: 1-1½ quarts
3 cups whole milk
1 box (3.4 oz.) Jello brand coconut cream instant pudding mix
1 container (6 oz.) coconut yogurt
1 tsp. vanilla extract
1 tsp. rum extract
1 can (8 oz.) crushed pineapple, drained
Prepare an ice cream maker according to the manufacturer’s directions.
In a large bowl, combine the milk, pudding mix, yogurt, both extracts and the crushed pineapple. Mix well. Pour into the ice cream maker. Freeze according to the manufacturer’s directions.
