I’m a little late in publishing this post. My weekend has been great, but totally different in what we usually do! Our truck run was changed and we were sent to Washington, so we got to have dinner with our youngest son and spend an awesome evening with him. Then we were sent to Oregon and was able to have lunch with on of our cousin’s and meet her sweet 4 month old twins. She’s a hoot and we had a fun time with her and her beautiful babies. Then we were off to Idaho and invite ourselves over for an early breakfast with our sister and her family. That’s how it works in the trucking world if you want to see us. This run was very unusual for us, we
never go that way, but I think the Lord knew it was where we were suppose to be. Our daughter had surgery Friday and He knew we wanted to be close. So we were also able to spend the weekend with our 5 of our grandchildren and visit her in the hospital after her surgery. It was truly a blessing that we were sent that way. I’m so thankful. Next week I will be going back to Idaho to spend the week with her to help her out.
I’m so enjoying spring and all the fresh fruit and vegetables. I guess when it’s finally spring, I just like to eat lighter. I love salad’s and there is so much you can do with fresh fruits and vegetables to make a scrumptious dish with so many different combinations. It’s just my husband and I for most meals at our house so I made my delicious Carrot Fruit Salad for two and dished it up using an orange for the bowl. My husband was impressed and that’s what counts, right!
- 1 orange
- 3 large carrots (grated)
- 1 apple (my favorite is Honey Crisps)
- ½ cup Craisins
- ½ cup pistachio's (shelled)
- ¼ cup orange juice
- ½ Greek Gods Yogurt
- ⅛ cup honey
- ⅛ teaspoon apple cider vinegar
- 2 teaspoons poppy seeds or sesamee seeds
- ¼ teaspoon ginger
- ¼ teaspoon Chamomile (not necessary but a big plus)
- Place oranges, apples, grated carrots, pistachio's, and Craisins in bowl and gentle mix. In a small bowl mix the rest of the ingredients together and use a whip to mix them together. Then pour over your fruit mixture and toss. Place in your two orange bowls and serve.
