Tomato Bisque

is the perfect soup for the second coarse to my Candlelight Valentine’s Day Dinner for Two Series.  The next two weeks I will be sharing five coarses of a delicious Candle Light Valentine’s Day Dinner for two. This Tomato Bisque is so creamy and full of flavor and very easy to make.

  • 3 large tomatoes
  • 3 cloves garlic, diced
  • ¾ cup chopped onion
  • 2 stalks celery, diced
  • 1 Tbs. basil
  • ⅛ tsp. thyme
  • ⅛ tsp. oregano
  • salt and pepper
  • 2 Tbs. tomato paste
  • 1 pint heavy cream
  • ¼ cup white wine
  1. Saute garlic and onion in a couple tablespoons of oil, add celery, salt and pepper. Add wine to deglaze pan. Cut tomatoes in half and then quarter them and add them to pan. Add the spices and cook for about 10 minutes, stirring often. Add heavy cream and cook for another 10 minutes. Place in blend and carefully puree, be very careful with hot content in a blender. Then replace back to pan and cook another 10 minutes.

It seriously took 30 minutes to make from scratch. I put some sour cream in a squeeze bottle to make the heart. Next coarse in my Valentine Dinner is a delicious salad.
