One of my favorite cookies to make for Christmas is Peppermint Meringues. They are so light, that they make me feel less guilty for eating cookies! They are super simple to make – and at least for me, I’m always amazed at how many cookies 2 egg whites will make!
Are y’all ready for Christmas? All of our shopping is done except for getting stocking stuffers. Almost everything is wrapped …. I think I know what we’re eating Christmas Day. Of course, the kiddos are excited – and since the 4 year old knows how to read his name, he knows exactly which presents are his and where they are under the tree!
Yield: about 3 dozen
2 egg whites
⅛ tsp. salt
⅛ tsp. cream of tartar
½ cup sugar
2 peppermint candy canes, crushed
In a mixing bowl, beat egg whites until foamy. Sprinkle with the salt and cream of tartar; beat until soft peaks forms. Gradually add sugar, beating until stiff peaks form, about 7-8 minutes.
Drop by teaspoonfuls onto an ungreased foil-lined baking sheets. Sprinkle with crushed candy. Bake at 225°F for 90 minutes (1 and a half hours).
Turn off the oven heat and leave cookies in the oven with the door slightly ajar for at least an hour or until the cookies cool.
Store in an airtight container.
