A big hello to everyone here at Memories by the Mile! This is Kristin from Dizzy Busy and Hungry and I am back for my monthly post. I am so happy to be here…thanks for having me! This month I am sharing with you my recipe for an amazing mac and cheese that my kids have named ‘Seashore Mac and Cheese’, because it uses shell pasta and shrimp. This dish is crunchy and cheesy and so flavorful! I hope your family will love it as much as mine.
This recipe was actually originated with my 15 year old son. He was in the mood for something fancier than a sandwich for lunch, so I suggested to him that he dig around the pantry and the fridge and see what he might want to whip up. He came up with this amazing combination that we all fell in love with! I wouldn’t call this dish healthy because of all the butter and cheese and the French fried onions, but it is an amazing comfort food dish that is perfect for a chilly fall or winter afternoon!
This dish is best eaten right when it is made, mostly because the French fried onions get soggy when stored in the refrigerator. But, you can always reserve some extra French fried onions, and then just reheat the mac and cheese in the oven topped with the extra French fried onions, and the result is as good as the day it was made!
