Pumpkin Caramel Cake
 by, Wanda Ann Olsen

 1 cup pumpkin
3/4 cup milk
2 eggs
1/2 cup butter or margarine (soften)
1 1/4 cups sugar
2 cups flour
1/4 tsp. salt
1.4 tsp. nutmeg
1 1/2 tsp. cinnamon
1/2 tsp. baking soda

Mix first four ingredients together, then add sugar. Next add dry ingredients and mix well. Pour in a greased and lightly floured Bundt cake pan. Bake at 375* for 30 minutes.
Cool completely and cover with saran wrap and place in freezer. This makes cake easier to frost.

Kraft Caramel Bits
a few drops of water
If you have frozen the cake, let it sit out for about 10 minutes so you can cut it. Cut cake in half and set top aside. Put caramel in a microwavable bowl and heat for about 1 minute. Stir to make it creamy and immediately spread on  the middle of the cake. Place the top back on and frost.
8 oz. cream cheese (room temperature)
1/4 cup butter
1/2 tsp. vanilla
2 cups powdered sugar
fall food coloring (20 drops orange & 1 black drop black)
Mix all ingredients together until creamy and spread on cake.
I hope you enjoy it as much as we do. Happy Fall!

Hi Wanda Ann, wow how amazing you cake looks and it sounds so yummy! I am amazed that you were able to cut the cake in half and put in the filling! I would be too afraid to do that part of the cake! You did a great job and I bet you made the hubs happy! Take care.

Wanda, this looks insanely delicious! I have never seen a bundt cake sliced like a layer cake, but now I'm never going to make a bundt without it!! Especially if it involves caramel. ;) I think this just made the Thanksgiving table.

    Love, Joy

I am baking this as I type it. I baked at 375 for 30mins and it was not fully done. I am adding an xtra 15mins (and watching to make sure it doesn't over bake). I will say my house smells AMAZING!
