Welcome to Memories by the Mile, thank you for coming by. I’m sharing a very special recipe today, Chicken Tostadas and the story about the special lady I got the recipe from.
We first met Andrea and Maudi in Atlanta where we use to get our loads to come home. Both David and I feel in love with them and the group of people that worked there. They were all from different places in Mexico and spoke very little English, but some how we communicated very well. These women know how to laugh and have fun.
AND MAN DO THEY KNOW HOW TO COOK! But they also taught us a HUGE lesson in sharing. Andrea just started sharing lunch that she had brought for her and her husband, Julio. Then they moved to a different warehouse and her lunch was at a different time. So Maudi started inviting us to eat what she had brought. Before long all the other girls were wanting us to taste what they had brought too. We left filled to the brim in more ways than one. Keep in mind, we ate in the employees lunch room where trucks drivers weren’t allowed. They were all a little family and just adopted us in. Sharing what each one of them had brought for themselves. We would eat and laugh and try to talk and communicate about our lives and our families. They loved to see pictures of our grandchildren and family or vacations we had taken. We loved getting to know their children too, through stories and pictures and food. We were even SURPRISED when they had brought a cake and gift the week of our birthday’s. We also celebrated theirs and enjoyed bringing something special for their birthday’s too.
We no longer load at their warehouse and miss them tons. But we talk to some of them from time to time, either on Facebook or by phone. These group of women truly made a permanent stamp on our hearts and we will always stay special friends.
This is a recipe Maudi wrote out for me and then I had it translated. Chicken Tostadas were one of my favorites and she would make it for me from time to time. She always made extra to send with us to eat in the truck on the way home.

- Maudi's Chicken Tostadas Recipe
- 1 Whole Chicken- cooked, discard skin & shred meat
- Carrots- Peel and dice, then cook in
- Jalapenos juice and water
- Frozen Peas (opt.)- just thaw
- Elbow Macaroni- Cooked
- Potatoes-cooked & cut in chunks (opt.)
- Canned Jalapenos- cut into small pieces, add to your comfort zone.
- Mexican Crema
- Mix together Mayonnaise and Mexican Crema to make the dressing creamy.
- Mix everything together and add salt and pepper to taste.
- Spread on top of the Tostadas and enjoy!
These Chicken Tostadas are very easy to make, my whole family loves them. This recipe could be a meal or a appetizer, either way it’s delicious! I hope you’ll try it and enjoy it as much as we do and pin it to have the recipe handy.
