Nana’s Artichoke Chicken
Marinated Artichoke Hearts
Cream of Chicken Soup
Cream of Mushroom Soup
1 cup chicken broth
1/2 cup white wine (opt.)
1/4 cup butter
salt and pepper
flour mixture (about 1/2 cup flour and 2 teas. paprika)
Trim chicken and cut in serving pieces. Pat dry with paper towel. Salt and pepper, then roll in flour mixture. Heat skillet with oil and butter. When chicken is nicely browned on both sides, place in roaster size pan with the artichokes hearts all around the chicken. Wipe out skillet and while warm, add soup, chicken broth and wine to make sauce. Pour over chicken and artichokes and cover. Place in 325* oven for 1 1/2 hrs.
Serve with mashed potatoes or rice. Nana’s also serves it with cranberry sauce.
